Salumist is Michael Redd, farmer/writer/chef based in upstate NY. I spent my twenties traveling the US learning to farm and cook and preserve, in search of culture. I think I found it. Only it looked different to me than the foodie culture I saw in magazines and television -- the instagram meals, celebrity chefs, bucolic farms. That culture was one of novelty, in search of the new. The culture I found was of necessity, in search of survival. Farmers struggling to hold on, chefs worked to the bone and forced to the bottle, transient workers without money to move on and without the energy to stay. 

There are untold stories behind that bunch of organic carrots, that farm-to-table meal. Salumist is a peak at how the sausage gets made.
