Salumist is Michael Redd, farmer/writer/cook based in upstate NY. I spent my twenties traveling the US learning to farm and cook and preserve, in search of culture. I think I found it. Only it looked different to me than the foodie culture I saw in magazines and television -- the instagram meals, celebrity chefs, clean, bucolic farms. Seems to me there was a lot more dirt and drugs and blood.
